"Petimezi" is a greek traditional food / drink made from dense boiled grape juic e bearring a taste of caramel. Use to be a common souh european "sweetener" prior to sugar. Now, has a number of "gurmet" application in the Mediterranean cooking, from marinating white meat and fish ...placed to a number of dips and souces and sweet type salad dressings, usually blended with vinegard. Further more useful sugar replacement in pastry, cookies, cakes, pies and of caurse fruit concerves and marmelades.
